56s and 57s is what you should aim for. The Subaru Brat even will do a 58.9 and it's pretty bad to drive all around.

Mid-high 58s in loads of random stuff. Underpowered probably has a small advantage but overweight slightly more enjoyable to drive. Just trying to find something that's both quick and can do the full 60 laps on one tank.
56s are impressive without race tyres (because who wants to pit for tyres or fuel?!)

I think high 58s or low 59s will take Overweight class. That being said, I'm in the 58.1s-58.3s in a few Underpowered cars.

Gotta remember we aren't all quite as quick
And I mean 57s is gonna be hard in overweight let alone 56s... (for me at least)

It all depends on how you build the car and which you pick. If you're following the spirit of LeMons, then 57s and low 58s are a good shout. For the overweight class, though I haven't driven it, I bet the 79 Camaro is towards the top of the list. The IROC Camaro would be good as well.
However, pretty much any Mazda (dunno about the other Japanese coupes) or practically any lightweight European/Japanese roadster is going to do 56's. My first flyer in a 90 Miata was a 56.4 and with tuning someone could do a 55.

59.300 on a default tune for the SVX. still need to hit the tuning windows.
