Probably the processor, W7 is pretty outdated now and it does struggle to do things.

I have a Core i5 and an Intel HDD and HD graphics card. I can see why it will be slower than mine.

and after all of that, I've found a fix... Reduce video quality from 1080 to 720... runs great now..

Well, that banter at the beginning was entertaining to hear back, i didn't realise at the time that it was being recorded!

Only just seen this.
Just to settle you're mind, 1080p is not 1080p on youtube. Youtube scale down all videos slightly to help make compatible with their systems, 1080p in real life, is called "Original Quality" on Youtube, and even now I see videos in 1440p which is more like actual 1080p.
Now, if you were able to record in 1080p without issue, you would still have a plethora of issues when it comes to editing the video, both with post processing which seems what you ran into before, plus the file sizes you'd be looking at would be astronomical. When I did TORA GT, a 25 minute video, you could be looking at a 5-7gb file.
That's 720p.
1080p, say hello to a 20gb+ file, mainly as to make it look decent, you're going to need to up the frames per second and the bitrate of the video.
Anyways, my recommendation is record in 720p, and produce in 1080p. Yes 1080p will not be 1080p, but it boosts the quality of the 720p which for an online video is more than respectable. Takes a much shorter time to do also.

By god, make sure you export as H.264! It's a compressed MP4 file, which is perfect for Youtube, and unless you're going to watch it in a cinema or something it's not going to lose much quality. That way you can make a 2Gb file a 500Mb one.
And yes, make sure you dabble with 720p rather than 1080p. The increase in pixels is something like 10x so you'll find 1080p significantly slower to render with a much larger files size.

Remember too that Forza 4 is rendered internally at 720p resolution, if your Xbox and TV are set to 1080p, the Xbox scalar chip simply resizes everything to 1080p. So there's very little point capturing at anything higher than 720p, there's no more detail, everything's just bigger and takes a lot longer to process. Also, when driving in-game Forza runs at 60fps, but YouTube videos only run at 30fps so capture and export videos at 30fps to reduce file sizes. Replays in Forza are 30fps anyway, so they're OK. Confusingly, broadcast TV in Europe runs at 25fps, so 30fps game videos like TORA TV can look smooth on YouTube but have a slight stuttering effect on TV due to 5 frames being missed.

And thanks for the tips guys, I'll take them on board and do my best to implement them into the next batch of videos, provided my computer lets me. Currently forced to recorded, edit and render in 720p. Any different and the computer throws a fit. At the moment using it with all visual/appearance settings turned off/minimum (looks like I'm running Windows 95) and still I max out the CPU. My computer cant handle any bigger for some reason, even 5 min clips in 1080p cause havoc :/
If I can work out to use my editing software properly (I use Camtasia Studio 7) and the computer doesn't die from manual labour I'll be sure to put everything into practice. there's still a lot for me to learn by sounds of things but hopefully I'll pick it all up soon (with some help haha)

GT Channel LLC have claimed visual content copyrights on the lobby screens... of all things. Been told by a few other YouTubers that is just a bunch of bull and to ignore & dispute the claims. Apparently GT are doing it all over Youtube regardless of the content featured in the videos and game genre.
