I am honestly pathetic at trying to align orbits to be able to dock. I simply can't do it, I have 2 Kerbins stuck in orbit :/

Okay, well.. it's about many things!
About building something stable, with enough thrust to lift it's own weight, with correct staging built in. Then once you do that, you've got to learn how to reach orbit!

My rocket didn't have enough fuel for a munar orbit insertion or trans-Kerbin-injection burn, so I ended up on a free return trajectory that took me beyond the orbit of minmus.. Poor Jeb encountered 23.3Gs of fore during re-entry..
This is the view I had from the apoapsis, Kerbin and Mun are visible. It would have been sweet if I'd made an accidental Minmus encounter, but it was quite far away at that point.
My rocket needs some tweaking yet!

what does kerbin escape mean? i've managed to shoot my rocket so it's going millions of kms away from earth (well it looks like that) way way pass the moon

Kerbin escape means that you are going so fast that you will escape Kerbin's gravity well. The first skill to master is orbital flight. Reaching Kerbin orbit is the first step in any mission. Try out the tutorials! Spaceflight isn't about aiming and firing, it's about orbital mechanics. Watch a Space Shuttle launch, they don't launch straight up, they pitch over onto their back to fly in an arc. The ISS circles the earth every 90 minutes.

To land on the Mun, you've got to do a proper orbital transfer out to the Mun, and then burn retrograde (backwards) to slow down into Munar orbit (so you start circling the Mun rather than shooting past it, that's called a free return trajectory), then try and land! You want the Mun positioned at 45 degrees ahead of you, and you want to burn prograde (forwards) from behind Kerbin to get your trajectory set to intercept the Mun!

Sometimes I think if these Moon landing conspiracists actually took the time to understand simple orbital mechanics, they'd realise that a flight to the Moon isn't witchcraft, it's actually pretty basic mechanics!
